So as I continue my journey of a healthier lifestyle, it is still sometimes hard to come up with recipes that pique my taste buds. Last night, as I plunged my head into the fridge to figure out yet another late dinner. I gathered all my greens and veggies and threw something together quickly. Here’s the recipe below. Try it out and tell me how you like it.
Prep Time: 15 mins.
Cook Time: 10 mins.
Total Time: 25 mins.
1/4 c. Onions (chopped)
3 Cloves Garlic (minced)
1 c. Spinach (chopped)
1 c. Kale (chopped)
1/4 c. Red Bell Pepper (chopped)
1/4 c. Green Bell Pepper (chopped)
1/4 c. Yellow Bell Pepper (chopped)
1. Place 1 to 2 caps of Olive Oil on low to medium heat. Add onions and garlic. Allow onions and garlic to brown and release flavor. Add in pepper variety shortly after.
2. After a few minutes add your greens, and stir so they will be moisten with oil. Add sea salt and cayenne to taste.
3. Cover and reduce heat to very low or off and let sit for 2 to 3 minutes for flavor to marinate in. Stir then serve.
This can go well as a side dish, served over rice, or as the main course.
